Preheat oven to 180°C. Peel, core and cut the apples into thick slices. Sprinkle one teaspoon of lemon juice on apple slices.
Toast the cashewnuts in a pan or in a preheated oven till light golden, cool and crush coarsely. Heat a non-stick pan and gently poach the apple slices in the orange and lemon juices for about ten minutes or until just soft, turn them over carefully for even cooking.
Toast the bread slices, trim the sides. Grate the cottage cheese and mix with the crushednuts thoroughly. Spread this mixture on the toasted bread slice and arrange the cooked apple slices on top.
Sprinkle cinnamon powder and place under a hot grill or in the preheated oven until browned to light golden. Drizzle the honey on the hot toasts, cut to desired shape and serve.
