Ingredients

 

·         ¼ cup fresh orange juice

·         9-10 chocolate cream biscuits

·         ¾ cup butter, softened

·         ¾ cup castor sugar

·         3 eggs

·         ¾ cup refined flour (maida)

·         ½ cup cocoa powder + for dusting

·         1 tsp baking powder

·         ½ cup dark chocolate ganache

·         Custard whipped cream for piping

·         Chocolate sauce to serve

·         Orange slices to serve

 

Method

 

1.      Preheat oven to 180ºC.

2.      Cream butter and sugar in a large bowl till the mixture turns light and fluffy.

3.      Break in eggs one at a time, beating the mixture after each addition. Beat till the entire mixture turns light and fluffy.

4.      Add vanilla essence and beat well.

5.      Sift refined flour, cocoa powder and baking powder directly into the bowl and gently fold in till well combined.

6.      Pour orange juice in two parts and gently fold in till a smooth batter is formed.

7.      Transfer the batter into a greased and lined 6 inch square cake mould and arrange the chocolate biscuits on top. Place the mould in the preheated oven and bake for 25-30 minutes.

8.      Bring the cake out of the oven and allow to cool completely.

9.      Pour the chocolate ganache over the cake and refrigerate till set.

10.  Scrape a knife along the sides of the mould. Trim the edges with a hot knife. Cut into 4 rectangle slices.

11.  Pipe out the custard whipped cream on top of each cake slice. Lightly dust with cocoa powder.

12.  Garnish with orange slices and serve with chocolate sauce.
