Methi Pyaz Ke Pakode

Fresh fenugreek leaves and onions make an excellent combination. And when this combination is used to make crisp pakode it is absolute bliss. Easy on the palate, you can have them for an evening snack or even serve them with cocktails or mocktails.

Ingredients

                                                                                                   

·         1½ cups chopped fresh fenugreek leaves (methi)

·         2 medium onions (pyaz)

·         Salt to taste

·         ½ tsp red chilli powder

·         ½ tsp cumin powder

·         1 tsp coriander powder

·         ¼ tsp turmeric powder

·         ¼ tsp carom seeds (ajwain)

·         2 tsps rice flour

·         ¾ cup gram flour (besan)

·         Oil for deep frying

·         Green chutney to serve

 

Method

 

1.      Take fenugreek leaves in a large bowl, add salt and mix well. Set aside for 10-15 minutes.

2.      Finely chop onions.

3.      Squeeze excess water from the fenugreek leaves through a muslin cloth. Discard the water and put the leaves into a large bowl. Add onions, red chilli powder, cumin powder, coriander powder, turmeric powder, salt, carom seeds, rice flour and gram flour and mix well.

4.      Heat sufficient oil in a kadai. Gently slide in small portions of the mixture into the hot oil and deep fry till golden brown and crisp. Drain on absorbent paper.

5.      Arrange the pakode on a serving platter and serve hot with green chutney.
