Korean Street Toast

A unique and extremely popular way of preparing toast in Korea. Eggs, veggies, butter, ketchup, makes for a sweet and salty sandwich which is just WOW! Cabbage and carrot add a delightful crunch to the omelette. Definitely worth a try. You will surely want to make it often.

Korean Street Toast

Ingredients

 

·         1 medium cabbage, shredded

·         1 large carrot, peeled and cut into thin strips

·         8 white bread slices

·         5-6 spring onion bulbs, sliced

·         5-6 tbsps chopped spring onion greens

·         Salt to taste

·         A pinch of black pepper powder

·         8 eggs

·         Butter as required

·         Castor sugar for sprinkling

·         Tomato ketchup for drizzling

 

Method

 

1.      Take cabbage in a bowl, add carrot, spring onion bulbs, spring onion greens, salt and black pepper powder. Break eggs directly into the bowl and mix well.

2.      Heat some butter on a non-stick tawa, add ¼ cabbage-egg mixture. Cook for 1-2 minutes on medium heat.

3.      Shape into a square with the help of spatula. Add butter and cook for 3-4 minutes. Baste with butter in between and continue to cook till golden brown.

4.      Flip and cook the other side for 3-4 minutes as well.

5.      Push the omelette onto one side of the tawa. Apply some butter on the other side and place 2 white bread slices and apply some butter on top. Toast for 2-3 minutes on both sides.

6.      Apply some butter on the omelette and cook till golden brown and the cabbage caramelizes.

7.      To make the sandwich, place the omelette on a toasted bread slice and sprinkle some castor sugar. Drizzle some tomato ketchup and place the remaining bread slice on top.

8.      Make more omelette sandwiches with the remaining mixture and bread slices.

9.      Diagonally halve each sandwich, place on a serving plate and serve immediately.
