Yellow Dal Fry

Lentils are a must in every Indian meal and a yellow dal fry is one of the best and most common ways to eat it. Toor dal or split pigeon peas are cooked till soft and tempered with onions, red chilli powder, garlic and cumin seeds sautéed in ghee. A pinch of turmeric adds to the beautiful yellow colour of the dal fry and the aroma of the tempering makes your mouth water. A bowl of this delicious dal along with steamed rice, papad and achar is comfort food for every Indian.

Ingredients for Yellow Dal Fry Recipe

  • Split pigeon pea (toor dal/arhar dal) 1 cup

  • Ghee 4 tablespoons

  • Onion finely chopped 1 medium

  • Garlic finely chopped 3 cloves

  • Turmeric powder 3/4 teaspoon

  • Salt to taste

  • Dry mango powder (amchur) 1 teaspoon

  • Cumin seeds 1 teaspoon

  • Red chilli powder 1/2 teaspoon

Method

Step 1

Heat half of the ghee in a pan. Add half of the chopped onion and garlic and sauté till golden.

Step 2

Add turmeric powder, dal, two cups of water and salt to taste. Stir and bring to a boil. Lower the heat and simmer for twenty minutes.

Step 3

Add mango powder and simmer for another fifteen minutes.

Step 4

Heat the remaining ghee in another pan. Add cumin seeds. When they begin to change colour add the remaining onion and garlic and sauté till pink.

Step 5

Add red chilli powder and sauté for two to three minutes.

Step 6

Add this seasoning to the dal, simmer for two minutes and remove from heat. Serve hot.
