How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Turkish Rice Recipe

  • Rice soaked in salt water 1 1/2 cups

  • Blackcurrants 2 tablespoons

  • Carrots diced 2 medium

  • Hazelnuts 2 tablespoons

  • Pine nuts(chilgoza) 2 tablespoons

  • Salt to taste

  • Stock cubes crushed 3

  • Olive oil 4 tablespoons


Step 1

Heat olive oil in a pan. Add carrots and fry for a couple of minutes. Drain and set aside. In the same oil add hazelnuts and pine nuts and fry till lightly browned. Drain and set aside.

Step 2

Drain and add the soaked rice to the remaining oil in the pan and sauté for about two minutes. Add three cups of water and bring it to a boil. Add salt and crushed stock cubes and mix. 

Step 3

Add small black currants and mix. Add the fried nuts and cook till most of the water is absorbed. Add the fried carrots and mix. Cover and cook on low heat till done.

Step 4

Serve hot.
