Ingredients for Tortilla Pizza Recipe

  • Tortillas 4

  • Mushrooms sliced 12-16

  • Olive oil 1 teaspoon + for drizzling

  • Yellow capsicum cut into strips 1 large

  • Red capsicum cut into strips 1 large

  • Green capsicum cut into strips 1 large

  • American corn kernels boiled 1/2 cup

  • Salt to taste

  • Crushed black peppercorns to taste

  • Pizza sauce 4 tablespoons

  • Black olives pitted and sliced 10-12

  • Green olives pitted and sliced 10-12

  • Grated mozzarella cheese 8 tablespoons

  • Grated cheddar cheese 4 tablespoons

  • Basil leaves 8 + for garnishing


Step 1

Preheat oven at 200° C.

Step 2

Heat one teaspoon olive oil in a non-stick pan. Add mushrooms and sauté on high heat till the moisture evaporates.

Step 3

Add all the capsicums and toss well and sauté for two minutes.

Step 4

Add corn kernels and toss. Add salt and crushed peppercorns, toss and sauté for a minute. Switch off heat.

Step 5

Place tortillas on a worktop. Spread one tablespoon pizza sauce on each. Spread cooked mixture on each and top with black and green olives, two tablespoons grated mozzarella cheese and one tablespoon grated cheddar cheese. Tear two basil leaves and sprinkle over each pizza.

Step 6

Place the pizzas on a baking tray, drizzle olive oil on each, put the tray in preheated oven and bake for ten minutes or till the cheese melts.

Step 7

Cut into wedges, garnish with basil leaves and serve hot.
