How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Thai Fragrant Rice Recipe

  • Thai Jasmine Rice 1 cup

  • Spring Onion

  • Spring onions with greens 1 cup

  • Coconut milk 2 cups

  • Lemon rind grated 1 teaspoon

  • Lemon grass roots 1 inch

  • Ginger 1 inch piece

  • Salt to taste


Step 1

Trim the spring onion greens and reserve. Roughly chop the stems and quarter the bulbs.

Step 2

Heat a deep non stick pan, add the drained rice, coconut milk, spring onion bulbs and stems, vegetable stock and lemon rind.

Step 3

Slice lemongrass root and add. Slice ginger and add. Add salt and mix. Cook till the rice is done. Chop spring onion greens and garnish the rice.

Step 4

Serve hot.
