Ingredients list for Thai Fragrant Rice

  • 1 cup Thai Jasmine Rice
  • Spring Onion
  • 1 cup Spring onions with greens
  • 2 cups Coconut milk
  • 1 teaspoon Lemon rind grated
  • 1 inch Lemon grass roots
  • 1 inch piece Ginger
  • to taste Salt

Method

  1. Trim the spring onion greens and reserve. Roughly chop the stems and quarter the bulbs.
  2. Heat a deep non stick pan, add the drained rice, coconut milk, spring onion bulbs and stems, vegetable stock and lemon rind.
  3. Slice lemongrass root and add. Slice ginger and add. Add salt and mix. Cook till the rice is done. Chop spring onion greens and garnish the rice.
  4. Serve hot.
