Ingredients list for Strawberry Crumble

  • 15-20 Strawberries hulled and roughly chopped
  • ½ cup Castor Sugar
  • ½ cup Butter
  • Base crumble
  • ½ cup Butter
  • ½ cup Castor sugar (caster sugar)
  • 1 cup Refined flour (maida)
  • 1 teaspoon Vanilla essence
  • Top layer crumble
  • 1 cup Refined flour (maida)
  • ½ cup brown sugar/jaggery
  • ½ cup Butter
  • 1 teaspoon Vanilla essence
  • 1 teaspoon Soda bicarbonate
  • 1 teaspoon Cinnamon powder

Method

  1. Preheat oven to 180º C.
  2. To make base crumble, put butter in a bowl, add sugar, refined flour and vanilla essenceand mix with finger tipstill the mixture resembles breadcrumb.
  3. Put the crumble at the base of a baking dish, press lightly with a spoon. Place the baking dish in the preheated oven and bake for 20 minutes.
  4. Heat a non-stick pan, add strawberries, sugar and butter and mix well. Cook till the mixture thickens.
  5. To make top layer crumble, put refined flour into a bowl, add brown sugar, butter, vanilla essence, soda bicarbonate and cinnamon powder and mix with finger tips till the mixture resembles breadcrumb.
  6. Remove the baking dish from oven, pour strawberry mixture over it, put the 2nd crumble and spread evenly with the back of the spoon. Place the dish in the preheated and bake again for 30 minutes.
  7. Serve hot.
