How to make Soya Sprout Vada - Soya chunks ground with sprouts, onions and other masalas, mixed with besan, shaped into vadas and deep fried

Soya Sprout Vada

With the recognition of being an important commercial pulse of the world, soya beans are coming into many kitchens around the world. Soya beans are said to control blood sugar levels, lower cholesterol, regulate the bowels and relieve constipation. Besides the popular tofu or beancurd, the beans are also fermented and used to make flavouring pastes and condiments, notably the Japanese soy sauce or shoyu and miso and the Indonesian tempeh.

Ingredients for Soya Sprout Vada Recipe

  • Soya bean chunks soaked 1/2 cup

  • Moong sprouts 1/2 cup

  • Onion roughly chopped 1 small

  • Ginger 1/2 inch piece

  • Garlic 2-3 cloves

  • Curry leaves 5-6

  • Dill leaves (suva) 1 cup

  • Fresh coriander leaves 1/2 cup

  • Green chilli chopped 2

  • Salt to taste

  • Gram flour (besan) 3 teaspoons

  • Oil to deep fry

Method

Step 1

Blend together soya chunks, sprouts, onions, ginger, garlic, curry leaves, dill leaves, coriander leaves, green chillis, salt and mix well.

Step 2

Add besan and mix with a little water such that the mixture can easily made into balls.

Step 3

Heat oil in no stick kadai and deep fry the ball till golden brown.Serve hot with green chutney.
