Ingredients for Shrimp And Egg Stir Fry

  • Prawns (kolambi/jhinga) peeled and deveined, boiled and chopped 32-36 medium

  • Eggs 2

  • Oil 2 tablespoons

  • Spring onions with greens 3-4

  • Garlic 3-4 cloves

  • Fresh red chillies 2

  • Soy sauce 1 teaspoon

  • Salt to taste

Method

Step 1

Heat oil in a non stick wok on high heat. Slice spring onions bulbs and garlic. Break eggs into a bowl and beat lightly. Add sliced spring onions and garlic to the wok and sauté. Chop 2 stalks of spring onions greens into ½ inch pieces.

Step 2

When onion and garlic are lightly browned, add shrimps and sauté till almost done. Chop red chillies and add. Add soy sauce and salt and stir. Add eggs and stir lightly. Add greens and mix lightly. Ensure that the eggs do not get dry.
