Ingredients for Scrambled Egg Cup Recipe

  • Eggs beaten 4

  • Whole Wheat Burger Buns 4 small

  • Oil 2 tablespoons

  • Ginger chopped 1 inch piece

  • Garlic chopped 4 cloves

  • Onion chopped 1 medium

  • Tomato chopped 1 large

  • Red chilli powder 1 teaspoon

  • Salt to taste

  • Fresh coriander leaves chopped 2 tablespoons

  • Butter melted 2 tablespoons

  • White sauce 4 tablespoons

Method

Step 1

Preheat oven to 180°C/360°F/Gas Mark 4.

Step 2

Heat the oil in a non-stick pan, add the ginger, garlic and onions and sauté till golden. Add the tomato, red chilli powder, two tablespoons water and salt.

Step 3

Stir and add the eggs and fresh coriander. Cook, stirring, till the eggs are well scrambled. Divide the mixture into four equal portions.

Step 4

Cut a thin slice off the top of the buns and scoop out the crumbs to form bread cups. Apply the melted butter on the inside of the cups and spoon one portion of the filling into each like a mound.

Step 5

Drizzle a tablespoon of white sauce on top of each mound and grill the buns in the preheated oven till the top turns a light golden.

Step 6

Serve hot.
