Ingredients 

  • 1 cup steamed rice
  • 3 tablespoons french dressing
  • 6 red radish, cut into thin round slices
  • 1 medium capsicum, cut into thin strips
  • 1 inch leek piece, shredded
  • 1 small cucumber, thinly sliced
  • 1 small carrot, cut into thin strips
  • 2 pickled gherkins, shredded
  • Salt to taste
  • 1 tablespoon lemon juice
  • 1 teaspoon red chilli flakes
  • 1 tablespoon chopped fresh parsley 

Method

  1. Mix the French Dressing into the steamed rice while still warm. Leave to cool. Mix in the radishes, capsicum, leek, cucumber, carrot and pickled gherkins. Add the salt, lemon juice and red chilli flakes and mix well. Transfer to a flat dish and garnish with parsley. Serve immediately.
