How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Rice Salad Recipe

  • Steamed Rice 1 cup

  • French dressing 3 tablespoons

  • Red radish cut into thin round slices 6

  • Capsicum cut into thin strips 1 medium

  • Leek shredded 1 inch piece

  • Cucumber thinly sliced 1 small

  • Carrot cut into thin strips 1 small

  • Pickled gherkins shredded 2

  • Salt to taste

  • Lemon juice 1 tablespoon

  • Red chilli flakes 1 teaspoon

  • Fresh parsley chopped 1 tablespoon

Method

Step 1

Mix the French Dressing into the steamed rice while still warm. Leave to cool. Mix in the radishes, capsicum, leek, cucumber, carrot and pickled gherkins. Add the salt, lemon juice and red chilli flakes and mix well. Transfer to a flat dish and garnish with parsley. Serve immediately.
