Ingredients list for Red Pepper Hummus

  • 2 medium Red Bell Pepper (capsicum) halved
  • floret Chickpeas boiled and peeled 1 cup + for topping
  • 2 1/2 tablespoons Tahini (sesame paste)
  • 3-4 Garlic cloves
  • 1 teaspoon Lemon juice
  • 8 tablespoons Olive oil
  • to taste Salt
  • Red chilli powder for sprinkling
  • Pita bread for serving

  1. Place red bell pepper halves in an air fryer and roast at 200º C for 8-9 minutes.
  2. Put boiled chickpeas and tahini in a chopper jar with garlic cloves, lemon juice, 4 tbsps olive oil and 1 tbsp water and process.
  3. Roughly chop roasted bell pepper and add to the jar and grind again. Add salt and grind till smooth.
  4. Transfer the hummus into a serving bowl. Sprinkle red chilli powder, top with boiled chickpeas, drizzle remaining olive oil and serve with pita bread.
