How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients

  • Cooked basmati rice 3 cups

  • Oil 2 tablespoons

  • Corn kernels 1/2 cup

  • Red capsicum finely chopped1

  • Green capsicum finely chopped1 small

  • Carrot grated1/2 medium

  • Green peas 1/2 cup

  • Salt to taste

  • Lemon juice 1 tablespoon

  • coriander leaves chopped2 tablespoons

Method

Step 1

Heat oil in a non stick pan.

Step 2

Add corn, green capsicum, red capsicum, carrot, green peas and sauté for four to five minutes.

Step 3

Add rice, salt and toss well. Cook for four to five minutes.

Step 4

Serve hot garnished with coriander leaves.
