Rainbow Rice

Main Ingredients

Cooked basmati rice, Oil

  • Cooked basmati rice
    3 cups
  • Oil
    2 tablespoons
  • Corn kernels
    1/2 cup
  • Red capsicum finely chopped
  • Green capsicum finely chopped
    1 small
  • Carrot grated
    1/2 medium
  • Green peas
    1/2 cup
  • Salt
    to taste
  • Lemon juice
    1 tablespoon
  • coriander leaves chopped
    2 tablespoons


Step 1

Heat oil in a non stick pan.

Step 2

Add corn, green capsicum, red capsicum, carrot, green peas and sauté for four to five minutes.

Step 3

Add rice, salt and toss well. Cook for four to five minutes.

Step 4

Serve hot garnished with coriander leaves.
