Ingredients list for Quinoa and Vegetable Pulao

  • 1 cup Quinoa soaked for 1 hour
  • 7-8 Button mushrooms
  • 1/4 cup Green peas
  • 1 1/2 tablespoons Oil
  • 2 Spring onion bulbs with stems
  • 1 teaspoon Cumin seeds
  • 4-5 Cloves
  • 8-9 Garlic cloves
  • 4 Green chillies
  • 2 cups Vegetable stock
  • to taste Salt
  • 1 cup Milk
  • for garnish Micro greens

Method

  1. Heat oil in a non-stick pan.
  2. Slice spring onion bulbs. Reserve the stems.
  3. Add cumin seeds, cloves and garlic cloves to the pan.
  4. Slit green chillies without cutting through and add alongwith spring onion bulbs and saute well.
  5. Chop spring onion stems and add.
  6. Quarter mushrooms and add. Toss and saute well.
  7. Add quinoa and mix well. Add vegetable stock and salt, mix and cook till the mixture come to a boil.
  8. Add green peas and mix well. Add milk, mix, cover and cook on medium heat till fully done.
  9. Garnish with micro greens and serve hot.
