Ingredients

  • 15-18 tender medium ladyfingers (bhindi), washed
  • 1 medium onion
  • 15-20 shallots
  • 2 tablespoons oil
  • Salt to taste
  • 2 teaspoons coriander powder
  • 1 tablespoon cumin powder
  • 1 teaspoon turmeric powder
  • ½ teaspoon dry mango powder (amchur)
  • 1 teaspoon red chilli powder

Method

  1. Discard the crown of the ladyfingers and cut into medium size pieces. 
  2. Heat oil in a non-stick pan.
  3. Chop the onion.
  4. Combine salt, coriander powder, cumin powder, turmeric powder, amchur and red chilli powder in a bowl. Mix well. Add ladyfingers to the masala mixture and mix well. Set aside.
  5. Add chopped onion and shallots to the pan. Toss and add the ladyfingers. Set aside the leftover masala.
  6. Toss to mix and cook for 4-5 minutes. Add leftover masala and mix well. Cook for 2-3 minutes more.
  7. Serve hot.
