Heat 2 tsps oil in a non-stick pan. Add onions and saute well.
Add capsicum strips and sliced sausages to the pan and toss to mix. Add chilli sauce and salt and toss well.
Heat sufficient water in a deep non-stick pan.
Transfer sausage mixture into a bowl and cool to room temperature.
Break 1 egg in a bowl.
Add salt and vinegar to the water and simmer. Whisk a little and slide the egg immediately into it. Let it poach for 3-4 minutes. Poach 3 more eggs similarly. Remove from heat and cool to room temperature.
Break remaining egg on a plate. Add salt and mix well.
Heat some oil in a non-stick pan.
Spread breadcrumbs on a plate. Add salt and mix.
Add crushed peppercorns to the egg on the plate and mix well. Dip poached eggs in it and coat with the breadcrumbs.
Gently place the coated poached eggs on the pan and shallow-fry till golden and crisp from both the sides.
Tear lettuce leaves and place on a serving dish. Put some of the cooked sausage mixture on it, place the poached fried eggs on it and top with remaining sausage mixture.
