Ingredients for Pista and Caramelized Apple Cup Cakes Recipe

  • Pistachio 1/4 cup + to sprinkle

  • Apples chopped 2 medium

  • Refined flour (maida) 1 cup

  • Baking powder 1 1/2 teaspoons

  • Softened butter 1 cup

  • Castor sugar 1 cup

  • Brown sugar 1 cup

  • Eggs 5

Method

Step 1

Preheat oven to 180° C.

Step 2

Sift refined flour and baking powder into a bowl.

Step 3

Place softened butter in another bowl, add castor sugar and cream together till light.

Step 4

Place brown sugar in a pan, add chopped apples and 2 tbsps water, cover and cook.

Step 5

Break eggs and add to butter-sugar mixture and mix well.

Step 6

When brown sugar-apple mixture begins to caramelize, switch off heat and let it cool slightly. Add pistachios and mix well.

Step 7

Add this mixture to flour mixture and mix well. Add egg mixture and mix well.

Step 8

Pour the batter into muffin moulds till ¾ full. Sprinkle some pistachios on top.

Step 9

Bake in the preheated oven for 50 minutes. Remove from oven and let them cool slightly.

Step 10

Remove from the moulds and serve hot.
