Ingredients list for Pista Surprise
- 1/4 cup + for garnishing Pistachios
- 2 cups Refined Flour
- 2 tablespoons Ghee
- 1 tablespoon Sugar
- 1 Lemon
- for deep-frying Oil
- Icing sugar to dusting
Method
- Knead together refined flour and ghee with sufficient water into a stiff dough. Cover with cling film and set aside for ten to fifteen minutes.
- Heat a non-stick pan, add sugar and two cups of water and stir sugar melts.
- Roughly chop pistachios.
- Squeeze lemon juice to the sugar syrup and mix well
- Divide dough into eight equal portions and shape them into balls. Roll out into circular discs and cut into rectangles.
- Take some water in a bowl.
- Place some pistachios in the center of a rectangle and roll into a cigar. Dampen the open edge and press lightly to seal.
- Heat sufficient oil in a kadai.
- Remove the sugar syrup from heat and set aside.
- Deep-fry the cigars in hot oil till golden. Drain on absorbent paper.
- Soak the fried cigars in the sugar syrup for one to two minutes. Drain and place on a serving plate.
- Dust icing sugar on top of the cigars and garnish with some pistachios and serve.
