Ingredients for Pista Crusted Chicken With Ponzu Sauce Recipe

  • Boneless chicken breast 2

  • Pistachios blanched & crushed 1 cup

  • Ponzu sauce 3 teaspoon

  • Salt to taste

  • Red chillies crushed 1/2 teaspoon

  • Olive oil 6 teaspoon

  • Onion cut into medium cubes 1 medium

  • Red capsicum cut into medium cubes 1 medium

  • Green capsicum cut into medium cubes 1 medium

  • Yellow capsicum cut into medium cubes 1 medium

Method

Step 1

Preheat oven to 200 °C/ 400 °F.Make crisscross slashes on the chicken breasts. Drizzle 1 tsp ponzu sauce on each breast along with salt, crushed red chillies.

Step 2

Put the crushed pistachios over the chicken in a thick layer. Heat 2 tsps olive oil in a non-stick pan. Add onion, the three coloured capsicums, 1 tsp ponzu sauce, salt and crushed red chillies. Sauté for 1-2 minutes.

Step 3

Put half the vegetables in an ovenproof dish. Place 1 chicken breast over them, drizzle 2 tsps olive oil over and cook in the preheated oven for 8-10 minutes or till done. Similarly cook the other chicken breast too. Serve hot.
