Heat 2 tbsps extra virgin olive oil in a non stick pan, add mushrooms and cook, tossing them occasionally for even cooking. To make the pesto, grind together basil leaves, garlic, pine nuts, salt, peppercorns, parmesan cheese and 4 tbsps extra virgin olive oil to a smooth paste. Add fresh cream to the mushrooms and cook. Chop red capsicum into ¼ inch pieces. Add pesto to the mushrooms and mix. Adjust salt. Add red capsicum and mix. Serve hot garnished with a few slices of Parmesan cheese.
