Peanut Pasta

What is the best thing one could rustle up in a hurry when hunger pangs are unbearable? The first thing that comes to mind is pasta! Believe it or not, it is the mainstay dish of all those who want a filling meal in a jiffy. What fascinates most food lovers is that it is available in a multitude of shapes, colours and now even flavours. The variety of shapes, sizes and designs include tubes, ribbons, spirals, shells, bows and wheels. Pleasures of pasta!

Ingredients for Peanut Pasta

  • Pasta 2 cup

  • Garlic chopped 1 tablespoon

  • Spring onion chopped 1/2 cup

  • Crushed roasted peanuts 1/4 cup

  • Chilli sauce 2 tablespoons

  • Cream 1/4 cup

  • Fresh basil leaves chopped 1/4 cup

  • Olive oil 1 tablespoon

  • Parmesan cheese 1/2 cup

  • Milk 1/4 cup

  • Red chilli flakes to taste

  • Salt to taste

Method

Step 1

Preheat the oven to 180º C. Cook the pasta until al dente adding salt to the water in which the pasta is being cooked.

Step 2

Heat oil in pan; add the garlic, onions and saute until it turns slight golden and the onions are tender.

Step 3

Add crushed peanuts, Chinese chilli sauce, cream and basil and toss well .Add pasta and mix.

Step 4

Stir well on low heat. Place the pasta to an oven proof serving dish, like a casserole.

Step 5

Stir in the milk to the prepared pasta. Sprinkle cheese on top to cover the pasta.

Step 6

Cover the dish with aluminum foil and bake for about 25 - 30 minutes until the cheese melts.

Step 7

Allow it to sit for 15 minutes before serving. Serve warm with your choice of white wine.
