Peanut Butter Toast with Fried Egg

Ingredients

  • Peanut butter crunchy8 tablespoons

  • Brown bread slices 8

  • Eggs 4

  • Cherry tomatoes 8-10

  • Spring onion bulb 1

  • Olive oil 1/2 teaspoon

  • Rocket leaves 6-7

  • Salt to taste

  • Black peppercorns crushed to taste

  • Sweet red chilli sauce 2 tablespoons

Method

Step 1

Halve cherry tomatoes and put in a bowl.

Step 2

Toast the brown bread slices.

Step 3

Slice spring onion bulb and put in the bowl.

Step 4

Heat olive oil in a non-stick pan.

Step 5

Roughly tear rocket leaves and place in the bowl.

Step 6

Spread 1 tbsp peanut butter on each toasted bread slice.

Step 7

Break 1 egg in a bowl.

Step 8

Place a fried egg ring in the pan and pour the egg into it. Sprinkle salt and crushed peppercorns on it and cook a sunny side up. Remove the ring mould and switch off the heat. Prepare the remaining fried eggs in the similar way.

Step 9

Add chilli sauce to the salad bowl and toss well.

Step 10

Place buttered bread slices on a serving platter in a pair of two. Put some salad on top of each pair and place one fried egg on each pair.

Step 11

Serve immediately.
