Ingredients for Pav Bhaji Bruschetta Recipe

  • French Loaf 1

  • Tomatoes finely chopped 2-3 medium

  • Oil 1 tablespoon

  • Onion finely chopped 1 medium

  • Ginger-garlic paste 1 1/2 teaspoons

  • Red chilli powder 1/2 teaspoon

  • Green capsicum 1 medium

  • Salt to taste

  • Potatoes boiled, peeled and mashed 3 medium

  • Pav bhaji masala 1 1/2 tablespoons

  • Mozzarella cheese 50 grams

  • Fresh parsley sprigs for garnishing

Method

Step 1

Preheat oven at 220ºC.

Step 2

Heat oil in a non-stick pan. Add onion and sauté till lightly browned.

Step 3

Cut French loaf into slices.

Step 4

Add ginger-garlic paste to the pan, mix and sauté well. Add red chilli powder, mix and saute.

Step 5

Add tomatoes, mix well, cover and cook till the tomatoes turn soft.

Step 6

Deseed and finely chop capsicum.

Step 7

Add salt to the pan, mix well, cover and cook till the oil separates.

Step 8

Add potatoes and mix well. Add pav bhaji masala, mix well and sauté. Add little water, mix, cover and cook on high heat for 3-4 minutes.

Step 9

Place bread slices on an ovenproof plate.

Step 10

Add chopped capsicum to the pan, mix and cook till capsicum turns soft.

Step 11

Grate cheese into a bowl.

Step 12

Spread cooked bhaji on each bread slice, top with grated cheese, put the plate in the preheated oven and bake till the cheese melts and bread turns crisp.

Step 13

Serve hot garnished with parsley sprigs.
