Ingredients list for Parval and Pumpkin Subzi
- 1 cup Pumpkin cut into ½ inch cubes
- 1 cup Parvals cut into ½ inch cubes
- 2 tablespoons Oil
- 1 teaspoon Cumin seeds
- 1 small Onion chopped
- 1/2 teaspoon Sugar
- 1 teaspoon Coriander powder
- 1/4 teaspoon Turmeric powder
- 1/2 teaspoon Green chilli chopped
- 1/2 teaspoon Ginger chopped
- 1 small Tomato chopped
- to taste Salt
- 2 tablespoons coriander leaves chopped
Method
- Heat oil in a non stick add cumin seeds, when it starts spluttering add onions and saute till light brown.
- Add sugar,coriander powder, turmeric powder, green chillies, ginger and saute for a minute.
- Add tomatoes and saute till oil surfaces.
- Add pumpkin and parwar and half cup water and cook till vegetables are tender.
- Add salt and coriander and cook for a minute.
- Serve hot.
