By Sanjeev Kapoor 22 Apr 2016 in Recipes Course New Update Main Ingredients Ripe Papaya, Scraped Fresh Coconut Cuisine Fusion Course Snacks and Starters Prep Time 6-10 minutes Cook time 41-50 minutes Serve 4 Taste Mild Level of Cooking Easy Others Veg Ingredients list for Papaya Coconut Boats 1 small Ripe Papaya peeled, seeded and cut into wedges 1/2 cup Scraped Fresh Coconut 5 Dried red chillies 3 Garlic cloves 1 Spring onion with greens 2 teaspoons Oil 1 small Onion finely chopped 2 tablespoons Lemon grass (white part only) chopped to taste Salt 2 teaspoons Brown sugar Method Grind dried red chillies, garlic cloves and spring onion with greens into a smooth paste. Heat oil in a non-stick pan, add onions, lemon grass and the ground paste. Mix well and cook for five minutes. Lower heat and add coconut, salt and brown sugar. Cook for ten to fifteen minutes, stirring continuously. Remove from heat, cool down to room temperature and grind the mixture to a coarse powder. Sprinkle on the papaya wedges and serve.
