Ingredients list for Palak Aur Gajar Pulao

  • 1 1/2 cups Rice soaked
  • 2 medium bunch Spinach chopped
  • 2 tablespoons Oil
  • 4 medium Carrots 1/2 inch cubes
  • to taste Salt
  • 3 For masala Cloves
  • 1 inch stick For masala - Cloves
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 large Onion chopped
  • 1 inch piece Ginger chopped
  • 10 cloves Garlic
  • 2 Green chillies chopped
  • 1 Bay leaf

Method

  1. For the masala, dry-roast the cloves, cinnamon, coriander seeds, cumin seeds and bay leaf for three or four minutes.
  2. Grind the roasted spices together with the onion, ginger, garlic, green chillies and one-fourth cup of water to a smooth paste.
  3. Heat the oil in a deep pan and sauté the masala paste till the oil separates .
  4. Add the carrots and sauté for a couple of minutes.
  5. Add the soaked rice, salt to taste and three cups of water and stir well.
  6. Cover and cook for five minutes. Stir in the spinach leaves -.
  7. Cover and cook until all the water has been absorbed. Serve hot.
