Pad Thai Yum Yum Noodles

  • Flat noodles boiled200 grams

  • Red capsicum seeded1/2 medium

  • Oil 2 tablespoons

  • Spring onions chopped5-6

  • Garlic chopped5-6 cloves

  • Broccoli 5-6 florets

  • Button mushrooms sliced6-8

  • Yellow capsicum seeded1/2 medium

  • Green capsicum seeded1 small

  • Carrots thin strips2 medium

  • Salt to taste

  • Soy sauce 1 teaspoon

  • Brown sugar 2 tablespoons

  • Fresh red chilli diagonally sliced1

  • Spring onion greens chopped1 stalk

  • Roasted peanuts coarsely ground3 tablespoons

  • Lemon juice 1 tablespoon

  • Bean sprouts 1/2 cup


Step 1

Heat oil in a pan.

Step 2

Add onion, garlic, broccoli, mushrooms, three coloured capsicums and carrots and toss. Add noodles, salt, soy sauce, brown sugar and toss some more. Add fresh red chilli and toss again. Add spring onion greens and most of the roasted peanuts and toss.

Step 3

Transfer into a serving dish. Add lemon juice and bean sprouts.

Step 4

Top with the remaining roasted peanuts and serve hot.
