Ingredients list for Oven-Fried Chicken And Cornmeal Crust
- 400 grams Boneless chicken breasts
- 1 cup Cornmeal
- 4 tablespoons Refined flour (maida)
- 2 tablespoons Cornflour/ corn starch
- to taste Salt
- 1 teaspoon White pepper powder
- 1 teaspoon Red chilli powder
- 1 teaspoon Crushed red chillies
- 2 tablespoons Lemon juice
- 1 teaspoon Garlic crushed
- 2 Egg whites
Method
- Preheat oven to 180°C. Mix refined flour, cornstarch, salt, white pepper powder, red chilli powder, crushed red chillies, 1 tsp lemon juice and crushed garlic well.
- Add egg whites and whisk till smooth.Make a few slits on the chicken breasts. Sprinkle salt and remaining lemon juice and rub in well. Coat each chicken breast with the prepared flour mixture.
- Mix cornmeal and salt and spread on a plate. Roll the chicken pieces in it and press gently so that the cornmeal coats the chicken completely.
- Shake off excess cornmeal and arrange them in a baking dish. Spray a little oil and cook in the preheated oven for 15-20 minutes. Spray oil in between once. Serve hot.
