Orange and Cinnamon Panjeeri

You can definitely be sure of losing track of time while eating this one. Whole wheat flour is slow roasted in ghee till it is light and fragrant, then mixed with castor sugar and flavoured with orange rind and cinnamon. You can store this sweet crumble for up to a week but we guarantee there won’t be any left to last that long. Happy Diwali indeed! This is a Sanjeev Kapoor exclusive recipe.

Ingredients list for Orange and Cinnamon Panjeeri

  • 250 grams Whole wheat flour (atta)
  • ½ cup Ghee
  • 2 Orange rind
  • 1 teaspoon Cinnamon powder
  • 150 grams Castor sugar (caster sugar)
  • 4 tablespoons Pistachios

Method

  1. Heat ghee in a non-stick pan. Add the wheat flour, mix and sauté on low heat till fragrant, stirring continuously.
  2. Remove from heat and cool completely. Add the castor sugar, orange rind and cinnamon powder and mix well.
  3. Serve or store in an airtight container for about a week.
