Moroccon Chickpea Tomato Salad

  • 1 cup chickpeas (kabuli chana) ,soaked overnight and pressure cooked with salt
  • 2 medium tomatoes, seeded and sliced
  • 1 medium onion, sliced thinly
  • 2 tablespoons chopped fresh parsley 
  • 2 tablespoons chopped fresh mint leaves 

Dressing

  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • A pinch of paprika
  • 1/4 teaspoon cumin powder
  • Salt to taste
  • Crushed black peppercorns to taste

Method

  1. Put chickpeas, tomatoes, onion, parsley and mint leaves in a bowl and toss.
  2. To make the dressing, mix together lemon juice, olive oil, paprika, cumin powder, salt and crushed peppercorns in a bowl.
  3. Add the dressing to the chickpea mixture and mix well.
  4. Serve immediately.
