- 1 cup chickpeas (kabuli chana) ,soaked overnight and pressure cooked with salt
- 2 medium tomatoes, seeded and sliced
- 1 medium onion, sliced thinly
- 2 tablespoons chopped fresh parsley
- 2 tablespoons chopped fresh mint leaves
Dressing
- 1 tablespoon lemon juice
- 2 tablespoons olive oil
- A pinch of paprika
- 1/4 teaspoon cumin powder
- Salt to taste
- Crushed black peppercorns to taste
Method
- Put chickpeas, tomatoes, onion, parsley and mint leaves in a bowl and toss.
- To make the dressing, mix together lemon juice, olive oil, paprika, cumin powder, salt and crushed peppercorns in a bowl.
- Add the dressing to the chickpea mixture and mix well.
- Serve immediately.
