Ingredients
- 2 cups frozen green peas, thawed
- 5-6 fresh mint leaves
- 1 tablespoon oil
- 1 medium onion
- 2 garlic cloves
- Salt to taste
- ½ teaspoon black pepper powder
- 2 cups vegetable stock
- ½ cup milk
- 1 lemon, cut into thin slices (optional)
Method
- Heat oil in a non-stick pan. Chop onion and garlic and add to the pan and sauté lightly.
- Add green peas, salt, pepper powder and 1½ cups vegetable stock and cook till peas are soft.
- Strain and reserve the stock. Cool the peas and put into a mixer jar.
- Add mint leaves and remaining cold stock and grind to a smooth puree.
- Pour the puree into the pan, add the strained stock and mix well and heat.
- Add milk and mix. Cook till it comes to a boil.
- Pour into individual bowls and serve hot. If you want you can serve the soup with a slice of lemon.
