Ingredients

  • 2 cups frozen green peas, thawed
  • 5-6 fresh mint leaves
  • 1 tablespoon oil
  • 1 medium onion
  • 2 garlic cloves
  • Salt to taste
  • ½ teaspoon black pepper powder
  • 2 cups vegetable stock
  • ½ cup milk
  • 1 lemon, cut into thin slices (optional)

Method 

  1. Heat oil in a non-stick pan.  Chop onion and garlic and add to the pan and sauté lightly.
  2. Add green peas, salt, pepper powder and 1½ cups vegetable stock and cook till peas are soft.
  3. Strain and reserve the stock.  Cool the peas and put into a mixer jar.
  4. Add mint leaves and remaining cold stock and grind to a smooth puree.
  5. Pour the puree into the pan, add the strained stock and mix well and heat.
  6. Add milk and mix. Cook till it comes to a boil.
  7. Pour into individual bowls and serve hot. If you want you can serve the soup with a slice of lemon.
