  • Processed cheese grated2/3 cup

  • Boneless chicken breasts cut into bite sized pieces 450 grams

  • Olive oil 2 tablespoons

  • Garlic cloves finely chopped 2

  • Salt to taste

  • Kidney beans 1 cup

  • Paprika 1/2 teaspoon

  • Fresh coriander leaves finely chopped 1/4 cup

  • Lemon 1/2

  • Onion diced 1 small

  • Red capsicum diced 1 medium

  • Tomatoes diced 2 medium

  • Jalapenos finely chopped 2

  • Cumin powder 1/2 teaspoon

  • Red chilli powder 1/2 tablespoon

  • Corn chips a few


Step 1

Preheat oven to 180°C. Heat oil in a non stick pan, add garlic and chicken and saute till lightly coloured. Sprinkle salt.

Step 2

Grind rajma with a little of the water in which it was boiled, salt, paprika, coriander leaves, juice of ½ lemon and grind till smooth. Pour this into a baking dish.

Step 3

Add onion to chicken along with tomatoes, red capsicum, jalapenos, cumin powder, red chilli powder and mix.

Step 4

Transfer this into the baking dish over the rajma sauce. Place corn chips all around the edges of the dish.

Step 5

Sprinkle cheese and bake in the preheated oven for 10-15 minutes or till chicken gets cooked and cheese bubbles.Serve hot.
