Ingredients list for Mashed Sweet Potatoes
- 2 large Sweet potatoes boiled
- 2 tablespoons Olive oil
- 15-20 Shallots peeled
- 3-4 cloves Garlic
- 2 tablespoons Butter
- to taste Salt
- 1/4 teaspoon Crushed black peppercorns
- 2 Green chillies chopped finely
- Juice of 1 lemon
- 2 tablespoons Fresh cream
- 2 tablespoons Alfalfa sprouts
Method
- Halve the sweet potatoes horizontally and peel them. Heat olive oil in a non-stick pan. Chop shallots and garlic in a chopper and add to this pan and sauté. Add butter and mix and continue to sauté till soft.
- Roughly chop sweet potatoes and add to the pan and mash roughly with a fork. Add salt, crushed black peppercorns, green chillies and mix well. Add lemon juice and cream and mix well.
- Transfer into a serving bowl and sprinkle a little pepper powder on top. Garnish with a few alfalfa sprouts and serve.
