Malai Paneer

A favourite with the vegetarians, this product made from milk is quite common, especially in the Indian subcontinent. You can make it fresh, chhena – an another version or just use the ones that are readily available in the market to prepare everything from simple snacks, curries, sabzis, mithais, desserts and the likes. An ingredient that can be relished in the raw form too – try serving it as a starter just sprinkled with a little chaat masala, black salt and chilli powder!

Ingredients

  • Paneer (cottage cheese) cut into cubes Fried500 grams

  • Fresh cream 1/2 cup

  • Oil 2 tablespoons

  • Cumin seeds 1 teaspoon

  • Asafoetida a pinch

  • Tomato pureed6 large

  • Red chilli powder 1 teaspoon

  • Turmeric powder 1/2 teaspoon

  • Nutmeg powder 1/2 teaspoon

  • Sugar 2 teaspoon

  • Garam masala 1 teaspoon

  • Salt to taste

Method

Step 1

Heat oil in a non stick pan, add cumin seeds and asafetida. Saute for thirty seconds. Add tomato puree and mix well.

Step 2

Add red chilli powder, turmeric powder, nutmeg powder and mix well. Lower the heat and cook till the oil surfaces.

Step 3

Add cardamom powder, sugar and salt to taste. Mix well. Add cottage cheese pieces and fresh cream. All the mixture to boil. Serve with roti.
