Ingredients list for Lemon Ice

  • 4 large Lemon
  • 1/2 cup Castor sugar (caster sugar)
  • 24 Fresh mint leaves
  • as required Ice cubes
  • 2 tablespoons LEMON SQUASH

Method

  1. Halve the lemons and squeeze the juice into a mixer jar. Add sugar, 20 mint leaves and blend well.
  2. Add some ice cubes and blend again. Add lemon squash and blend again till the ice is completely crushed.
  3. Pour into 4 stemmed glasses and serve immediately garnished with a mint leaf. You can also shape the mixture into quenelles, freeze and then serve.
