Ingredients for Lemon Ice Recipe

  • Lemon 4 large

  • Castor sugar (caster sugar) 1/2 cup

  • Fresh mint leaves 24

  • Ice cubes as required

  • LEMON SQUASH 2 tablespoons

Method

Step 1

Halve the lemons and squeeze the juice into a mixer jar. Add sugar, 20 mint leaves and blend well.

Step 2

Add some ice cubes and blend again. Add lemon squash and blend again till the ice is completely crushed.

Step 3

Pour into 4 stemmed glasses and serve immediately garnished with a mint leaf. You can also shape the mixture into quenelles, freeze and then serve.
