How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Lemon Coconut Rice Recipe

  • Cooked rice 2 cup

  • Lemon juice 2-3 teaspoon

  • lemon 1

  • Coconut milk 1 cup

  • Scraped fresh coconut ½ cup

  • Oil 2 tablespoon

  • Mustard seeds 1 teaspoon

  • Curry leaves 10-12

  • Turmeric powder ¼ teaspoon

  • Salt to taste

  • Crushed black peppercorns to taste

  • Banana leaf pieces


Step 1

Heat 1 tbsp oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, turmeric powder, coconut milk, rice and salt and mix well. Cook for 5-7 minutes. Transfer this into a bowl.

Step 2

Add scraped coconut, lemon juice and crushed peppercorns and mix well.

Step 3

Slice lemon.

Step 4

Place some of the lemon slices at one end of each banana leaf piece, place a portion of rice over it and roll.

Step 5

Heat remaining oil in another non-stick pan, place the rolls on it and cook till the underside is browned, flip and cook on the other side too.

Step 6

Arrange the rice rolls on a serving plate and serve immediately.
