Ingredients list for Lemon Coconut Rice
- 2 cup Cooked rice
- 2-3 teaspoon Lemon juice
- 1 lemon
- 1 cup Coconut milk
- ½ cup Scraped fresh coconut
- 2 tablespoon Oil
- 1 teaspoon Mustard seeds
- 10-12 Curry leaves
- ¼ teaspoon Turmeric powder
- to taste Salt
- to taste Crushed black peppercorns
- Banana leaf pieces
Method
- Heat 1 tbsp oil in a non-stick pan, add mustard seeds and let them splutter. Add curry leaves, turmeric powder, coconut milk, rice and salt and mix well. Cook for 5-7 minutes. Transfer this into a bowl.
- Add scraped coconut, lemon juice and crushed peppercorns and mix well.
- Slice lemon.
- Place some of the lemon slices at one end of each banana leaf piece, place a portion of rice over it and roll.
- Heat remaining oil in another non-stick pan, place the rolls on it and cook till the underside is browned, flip and cook on the other side too.
- Arrange the rice rolls on a serving plate and serve immediately.
