Khichu

Gujarat has long stretches of unspoilt coastline and an endless supply of fish and shell fish. But strict Jainism in the past and orthodox Hinduism today has encouraged widespread vegetarianism.  The Gujarati cuisine is not heavily spiced but slightly sweeter than the cuisines of the neighbouring states.
Gujarati food is distinctively vegetarian with about 65% of its population shunning the meat.  The remaining 35% of the state’s population consists of Bohra Muslims and Parsis. Bohra Muslims are the followers of Abdullah who were Hindus who adopted Muslim religion.  The Parsi cuisine on the other hand is a blend of western influences.

Ingredients for Khichu Recipe

  • Jowar flour 1 cup

  • Green chillies 3

  • Garlic 10 cloves

  • Ginger 1 inch piece

  • Salt to taste

  • Soda bicarbonate a pinch

  • Yogurt 2 tablespoons

  • Sesame seeds (til) 1 tablespoon

  • Oil 2 tablespoons

  • Cumin powder 1/2 teaspoon

Method

Step 1

Heat 1½ cups water in a deep non stick pan. Grind green chillies, garlic and ginger with a little water to a fine paste. Add this paste to the water along with salt, soda and yogurt and mix well.

Step 2

Add jowar atta and cook, stirring to avoid lumps.Add sesame seeds and mix. Cover and cook for 2-3 minutes.

Step 3

Add oil and cumin powder and mix again. Cover and cook till it leaves the sides of the pan. Serve hot immediately.
