Ingredients list for Kale and Couscous Fritters

  • 1 cup Kale leaves shredded
  • 1/2 cup Couscous
  • 1/2 cup Processed cheese grated
  • 1/2 teaspoon Mixed herbs dried
  • 1/4 teaspoon Red chilli flakes
  • 1 tablespoon Cornflour/ corn starch
  • 1/4 cup Bread crumbs fresh
  • to taste Salt
  • 1/4 teaspoon Crushed black peppercorns
  • for deep-frying Oil

Method

  1. Take couscous in a bowl, add one cup warm water, cover with a cling film and set aside till the grains are cooked.
  2. Remove the cover, fluff up the grains with a fork and add kale, cheese, mixed herbs, chilli flakes, cornflour, breadcrumbs, salt and crushed peppercorns and mix well.
  3. Heat sufficient oil in a pan. Drop small portions of the couscous mixture into the hot oil and deep-fry till golden. Drain on absorbent paper.
  4. Serve hot.
