Relish a salad platter of thinly sliced tomatoes, with chunks of mozzarella, a drizzle of olive oil, sliced black olives and basil leaves. Arrange in concentric circles on a nice white plate. The word relish is just perfect here. And not just salads, for all those rich and good-looking Indian preps, the very famous onion-tomato masala is a must! Then, there are soups, beverages (call for the Bloody Mary!), snacks and even desserts made of these plump red things. Even the green ones are in use today. Must say, terrific tomatoes!

Ingredients for Italian Tomato Sauce Recipe

  • Tomatoes 4-5 large

  • Salt to taste

  • Olive oil 2 tablespoons

  • Garlic cloves chopped 6-8

  • Onions 2 medium

  • Black pepper powder to taste

  • Red chilli flakes 1/2 teaspoon

  • Sugar 1 tablespoon

  • Dried oregano 1 teaspoon

  • Fresh basil leaves 8-9

Method

Step 1

Heat sufficient water in a deep non-stick pan. Add salt and bring it to a boil.

Step 2

Remove the eye of tomatoes, make a cross at the bottom, put in the boiling water and blanch for a minute.

Step 3

Remove the tomatoes from the boiling water and put them in ice cold water. Peel and puree them.

Step 4

Heat olive oil in a non-stick pan. Add garlic and sauté for half a minute. Add onion and sauté till it turns soft.

Step 5

Add pureed tomatoes, mix and add salt. Mix well and simmer for 5-10 minutes. Add salt, pepper powder, chilli flakes, sugar and oregano and mix well. Cook for 2-3 minutes.

Step 6

Shred basil leaves.

Step 7

Switch off heat and add shredded basil leaves. Mix well.

Step 8

Use as required.
