How many times have we thought rice is a blessing? We use it for holy purposes but we also can pressure up a quick pulao or khichdi when hunger pangs are drumming away! This is one grain that is about 98% percent digestible. In India we are familiar with Basmati, Patna or brown rice but it is also available as Italian Rice and Glutinous Rice which is popular in Chinese and Japanese cuisines.

Ingredients for Italian Rice Recipe

  • Cooked rice cups

  • Celery sliced 2 stalks

  • Carrot julienne 2 medium

  • Green capsicum cut into thin strips 1

  • Red capsicum cut into thin strips 1

  • Onion thickly sliced 1 medium

  • Mayonnaise 2 tablespoons

  • Oil 2 tablespoons

  • Vinegar 1 tablespoon

  • Mixed herbs dry 1 tablespoon

  • Salt to taste

  • Black pepper powder to taste

  • Mozzarella cheese 1/2 cup


Step 1

In a bowl mix together celery, carrots, green and red capsicum, and onion. Mix well.

Step 2

Make a seasoning with mayonnaise, oil, vinegar, mixed herbs, salt and pepper powder. Whisk well.

Step 3

In a fresh bowl add the rice, mixed vegetables, mayonnaise dressing and grated cheese. Toss all well and serve with hot soup.
