Ingredients list for Italian Rice
- cups Cooked rice
- 2 stalks Celery sliced
- 2 medium Carrot julienne
- 1 Green capsicum cut into thin strips
- 1 Red capsicum cut into thin strips
- 1 medium Onion thickly sliced
- 2 tablespoons Mayonnaise
- 2 tablespoons Oil
- 1 tablespoon Vinegar
- 1 tablespoon Mixed herbs dry
- to taste Salt
- to taste Black pepper powder
- 1/2 cup Mozzarella cheese
Method
- In a bowl mix together celery, carrots, green and red capsicum, and onion.
Mix well. - Make a seasoning with mayonnaise, oil, vinegar, mixed herbs, salt and pepper powder. Whisk well.
- In a fresh bowl add the rice, mixed vegetables, mayonnaise dressing and grated cheese. Toss all well and serve with hot soup.
