Ingredients for Green Apple and Cheese Soup Recipe

  • Green apples medium

  • Processed cheese grated 2 tablespo for garnishing

  • Butter tablespoons

  • Onion chopped medium

  • Bay leaf 1

  • Cinnamon inch stick

  • Black peppercorns 4-5

  • Garlic cloves chopped 3-4

  • Salt to taste

  • White wine cup

  • Fresh cream teaspoons

Method

Step 1

Heat butter in a non-stick pan. Roughly chop apples.

Step 2

Add onion to the pan and sauté for a minute. Add bay leaf, cinnamon and peppercorns and sauté.

Step 3

Add garlic and sauté for 2 minutes. Add apples and mix well. Add salt, mix well and sauté for 3-5 minutes.

Step 4

Add white wine, stir well. Add sufficient water, stir to mix, cover and cook for 8-10 minutes.

Step 5

Remove from heat and blend using a hand blender. Strain soup into a bowl.

Step 6

Transfer strained soup into a non-stick pan on heat and bring to a boil.

Step 7

Add cheese and whisk well till the cheese melts. Add cream, mix well and heat for a minute.

Step 8

Serve piping hot garnished with grated cheese.
