Fresh Tacos Mexican speciality – maize flour tacos filled with a tasty mixture of capsicums, chicken, purple cabbage and refried beans. This is a Sanjeev Kapoor exclusive recipe. By Sanjeev Kapoor 24 Feb 2017 in Recipes Course New Update Main Ingredients Maize flour (makai ka atta), Refined flour (maida) Cuisine Mexican Course Snacks and Starters Prep Time 31-40 minutes Cook time 16-20 minutes Serve 4 Taste Mild Level of Cooking Easy Others Non Veg Ingredients list for Fresh Tacos 1 cup Maize flour (makai ka atta) ? cup + for dusting Refined flour (maida) to taste Salt a pinch Turmeric powder 1½ tablespoons Oil 4 tablespoons Refried beans 1 large Red capsicum cut into thin strips 1 large Green capsicum cut into thin strips ½ cup Purple cabbage shredded ¾ cup Chicken gilled, strips ½ cup Iceberg lettuce shredded to sprinkle Sour cream Method Take maize flour in a bowl. Add refined flour, salt and turmeric powder and mix. Add sufficient warm water, mix and knead into semi-soft dough. Add oil, knead again and set aside for 10-15 minutes. Divide the dough into equal portions, dust each portion with refined flour, and roll out into medium sized chapattis. These are tacos. Heat a non-stick pan. Place the tacos on it and roast till golden from both sides. Place the roasted tacos on a serving platter. Place 1 tablespoon refried beans on one side. Top with red capsicum, green capsicum, cabbage, chicken strips and lettuce, bring the other half over and shape into a crescent.
