Ingredients for Fresh Herbs and Spicy Bread Loaf Recipe

  • Fresh coriander leaves roughly chopped 1/4 cup

  • Fresh mint leaves roughly chopped 1/4 cup

  • Green chillies 4-5

  • Refined flour (maida) 4 cups + 4

  • Oil for greasing

  • Fresh yeast 2 teaspoons

  • Castor sugar (caster sugar) 2 teaspoons

  • Salt 2 teaspoons

  • Ginger 1/2 inch

  • Garlic chopped 1 teaspoon

  • Butter 2 teaspoon

Method

Step 1

Put yeast and castor sugar in a bowl, add two tablespoons warm water and set aside for two minutes for the yeast to activate.

Step 2

Put flour and salt in another bowl. Add yeast mixture and mix well.

Step 3

Grind together coriander leaves, mint leaves, green chillies, ginger and garlic, with sufficient water, to a smooth paste.

Step 4

Add this paste to the flour mixture and knead into a soft dough. Add butter and knead again. Cover with a damp muslin cloth and set aside to prove for twenty minutes.

Step 5

Knock back the dough, place in the greased tin, cover with a damp muslin cloth and set aside for twenty minutes.

Step 6

Preheat oven to 200º C. Grease a loaf tin with some oil.

Step 7

Remove the muslin cloth, put the tin in the preheated oven and bake for fifteen to twenty minutes.

Step 8

Remove from the oven and brush some butter on top. Let it cool.

Step 9

Remove from the loaf tin, slice and serve.
