Cream butter with castor sugar until pale and soft. Beat in the egg and mix. Add vanilla essence. Sieve refined flour and baking powder onto this mixture. Mix with a palette knife in a cut and fold style. Take a pudding mould. Arrange the mango slices at the base. Sprinkle sugar over them. Put the pudding batter over and level the top. Bake in the preheated oven at 160°C for about one hour.
