Ingredients list for Egg Fried Quinoa

  • 2 Eggs
  • 2 cups Quinoa soaked and cooked with salt
  • 1 tablespoon Olive oil
  • to taste Salt
  • 3-4 Spring onions with greens
  • to taste Crushed black peppercorns
  • 1 tablespoon Garlic crushed
  • 10-12 Fresh green soya beans (edamame)
  • ¼ medium Cabbage
  • 1 medium Carrot peeled
  • 1 teaspoon Soy sauce
  • 1 teaspoon Castor sugar (caster sugar)
  • 1 teaspoon Vinegar

  1. Heat olive oil in a non-stick pan.
  2. Heat 1 cup water in another non-stick pan and bring it to boil.
  3. Break eggs and put into the 1st pan, add salt and mix well. Cook, stirring, till the eggs are scrambled. Transfer into a bowl.
  4. Place the same pan back on heat (there will be still some oil left in the pan). Slice spring onion bulbs and add to the pan alongwith garlic and mix well.
  5. Add soya beans to the boiling water. Cook till done.
  6. Roughly chop cabbage and add to the 1st pan and mix well. Grate carrot directly in the pan and mix well. Add quinoa and mix well. Cook till quinoa and vegetables well done. Add salt, soy sauce and castor sugar and mix well.
  7. Add salt to the soya bean and mix well.
  8. Roughly chop spring onion greens and add to the vegetables along with crushed peppercorns, vinegar and mix well. Cook for 3-4 minutes.
  9. Transfer the quinoa onto a serving plate, top with cooked egg and soya beans and serve immediately.
