Ingredients for Crunchy Peanut Cookies Recipe

  • Refined flour crushed 2 tablespoons

  • Peanut butter 3/4 cup + 1 tablespoon

  • Peanut butter 1/2 cup

  • Cinnamon powder 1/2 teaspoon

  • Soda bicarbonate 1/4 teaspoon

  • Rolled (porridge) oats 1/2 cup

  • Castor sugar (caster sugar) 3/4 cup + 1 tablespoon

  • Golden syrup 1 tablespoon

  • Desiccated coconut 1/4 cup + 1 tablespoon

  • Lemon rind grated 1 teaspoon


Step 1

Place the refined flour in a bowl.

Step 2

Add cinnamon powder, soda bicarbonate and mix. Add peanut butter, crushed roasted peanuts and oats and mix. Add caster sugar, golden syrup and desiccated coconut and mix. Add grated lemon rind and a little water and mix into a soft dough.

Step 3

Wrap the dough in cling film and refrigerate for half an hour.

Step 4

Preheat the oven to 180°C/350°F. Take the dough out of the refrigerator and divide into small marble sized portions and shape into balls. Flatten each ball and place them a silicon baking sheet. Keep this sheet on a baking tray and bake in the preheated o

Remove from the oven and transfer the cookies to a wire rack to cool.

Store in an airtight tin.
