Ingredients list for Cream Corn and Egg on Toast
- ½ cup Corn Kernels
- 2 Eggs
- 4 Brown bread slices
- 1 tablespoon Oil
- 1 tablespoon Ginger finely chopped
- 1-2 Green chillies finely chopped
- 1 large Onion finely chopped
- ¼ teaspoon Turmeric powder
- to taste Salt
- 1 tablespoon Fresh coriander leaves finely chopped
- For garnishing
- Fresh mint sprigs
- A spring onion flower
Method
- Toast brown bread slices in a toaster till crisp.
- Heat oil in a non-stick pan, add ginger and green chillies and sauté for a minute.
- Add onion and sauté for 2 minutes. Add turmeric powder, cream corn and salt and mix well.
- Break eggs into the pan and mix. Add coriander leaves and mix and cook till the eggs are done.
- Place the toasts on a serving plate. Spread the corn mixture on them. Garnish with a mint sprig and a spring onion flower and serve hot.
