Ingredients
- 3 medium bunches spinach
- Oil to deep fry
- 1 tablespoon sesame oil (til oil)
- Salt to taste
- 1 tablespoon sugar
- 1 teaspoon crushed red chillies
- 1 teaspoon toasted sesame seeds (til)
Method
- Trim the stems and use only the spinach leaves. Wash them under running water. Dry well. Stack them one on top of the other, fold and shred finely.
- Heat sufficient oil in a wok, add the shredded spinach leaves and deep fry till crisp and dark green. Drain on absorbent paper.
- Transfer onto a serving plate. Sprinkle salt, sugar, crushed red chillies and toasted sesame seeds and serve immediately.
